April Fool’s and The Bakery

highlights: I spent the whole day in the bakery; I made croissants; I made baguettes, ficelles, and pain de tradition; The bread is served at breakfast and lunch the next day in the cafeteria; We played an April Fool’s joke on the Deputy Director.

J’ai passé la journée entière en boulangerie avec une classe de première année. On a façonné la pâte en croissants, les miens sont les croissants australiens : pas trop cuits ; un peu malformé ; mais bons.
I spent the whole day in the bakery with a first year class. We made croissant dough and my croissants were to be Australian : slightly undercooked, misshaped ; but tasty .

La pâte se compose en :

The dough consisted of :

  • 2000g de farine de tradition / flour of tradition
  • 30g de sel / salt
  • 60g de sucre / sugar
  • 60g de levure / yeast
  • 1L d’eau / water
Quand la pâte est prête, il faut préparer la beurre. On a tappé sur la beurre pour la ramollir un peu. On l’a formé en rectangle pour avoir un plus beau feuilletage.
When the dough was ready, it was time to prepare the butter. We beat the butter slightly to soften it. Then we shaped it into a flat rectangle so that we would have nice feuilletage (layers of butter and pastry).
La pâte est formé en rectangle et le 400g de beurre est mise au-dessus. On a plié la pâte et l’a tournée de couvrir la beurre et tappé encore plus pour l’allonger. On a replié la pâte et tourner encore une fois, et ça répétait deux fois de plus. Le resultat : une feuilletage de beurre, pâte, beurre, pâte, beurre, pâte, etc.
The dough was also shaped into a rectangle and the 400g of butter was placed on top. We folded the dough and turned it around to cover the butter et beat it down again to make it longer. We refolded the dough and turned it around again, this happened once more. The result : a nicely layered dough of butter, pastry, butter, pastry, etc.
On l’a laissé pour se stabiliser.
We let it sit for some time.
Dans l’après midi, elle était prête pour façonner en croissants. Il fallait qu’on roule la pâte en forme carré de 50cm. On l’a coupé en deux parties, et ensuite on a coupé chaque partie en huit tranches (en forme triangules isocèles). Avec les triangles, on a roulé les petits croissants.
In the afternoon, the dough was ready to be made into croissants. We needed to roll the dough into a square of 50cm. We cut it into two parts then we cut each part into eight slices (each an isosceles triangle). With the triangles, we rolled the croissants.
 
 
On les a mis dans le four pendant 20-25 minutes. Voilà le resultat !

Plus tard dans l’après midi, Vincent et moi voulions aller à Brive, mais il faillait qu’on prenne la voiture. Il a demandé à Michel si on peut aller à Toulouse ou Barcelone- quelle poisson d’avril !
Later in the afternoon, Vincent and I wanted to go to Brive, but we needed to take the car. He asked Michel if we could take the car to Toulouse or Barcelona- Happy April Fool’s!
